GENERAL DESCRIPTION:
Project Open Hand, a leader in providing nutrition services to people living with symptomatic HIV/AIDS, to seniors and to homebound people living with critical illness, seeks a cook who is responsible for assisting in the daily production of all prepared food products distributed by Project Open Hand. The Cook works with all kitchen staff to provide supervision and a safe, rewarding experience to those assisting as unpaid volunteers. Position is 30% production cooking and 70% production prep work.Insert description here
SPECIFIC DUTIES:
- Carries out the instructions of the Executive Chef by taking direction from the Lead SLP Cook, who is your direct supervisor. Requirements would take the form of daily preparation and cooking of all foods
- Checks for a station assignment and fulfills the daily duties of that assignment, as developed by the Executive Chef.
- Maintains the highest standards of kitchen hygiene in accordance with but not limited to all federal and state health laws, reporting any observed problems to a supervisor for immediate correction.
- Ensures all food in rotated, covered and dated in the walk-in, and that the walk-in is clean at all times.
- Follows all standardized recipes with precision, understands the use of an HACCP flow chart in identifying Critical Control Points.
- Assists in all meat fabrication. ( ie. cutting, trimming & boning).
- Assists, as assigned, with off produce preparation, (cutting, cleaning, peeling, paring, coring, portioning, sectioning, zesting, scoring.)
- Prepares, as assigned, all required sauces.
- Complies with all portion sizes, quality standards, departmental rules, policies and procedures.
- Maintains a sanitary workstation.
- Assists in identifying and selecting cuts of meat, fish and poultry, and other food products to complete the recipes as required.
- Sets up the food production line by checking the work table, counters and other required stations, and making sure all items needed are available.
- Helps monitor all areas of food production for safety and sanitation concerns. Takes action to correct unsafe/ unclean areas immediately.
- Other duties as assigned.
QUALIFICATIONS:
- At least 3 years experience in a high volume food facility, preferably in an institutional setting.
- Ability to communicate with kitchen staff, understand and complete HACCP procedures.
- Subject to wet floors, temperature extremes, and loud noise.
- Must be able to bend, stoop, and lift items up to 50 pounds, unassisted, on a regular basis.
- Must be able to stand for long periods of time, and move from place to place in the kitchen.
- Must be able to read and write in English to facilitate communications.
- Must possess finger and hand dexterity for using small tools and equipment.
- Sensitivity to the circumstances and needs of people living with critical illness and Seniors.
