TITLE: Swing Cook

GENERAL DESCRIPTION:

Project Open Hand, a leader in providing nutrition services to people living with symptomatic HIV/AIDS, to seniors and to homebound people living with critical illness, seeks a Swing Cook. The primary assignment for the Swing Cook is to be a vacation reliever for other personnel in the kitchen. The Swing Cook must be flexible to work any shift, any day to include weekends, nights and holidays. The Swing cook may be called upon to work double shifts at times. The Swing Cook will spend time in each department learning the roles of SLP, HIV Regulars, HIV Special Diets, Soup Program and the PM Production Manager shift. The “home” shift for this position will be on the evening PM Production Manager shift, Monday-Friday 12:00 PM to 8:00PM. When the person is in the swing role they will move to a shift that needs coverage. They will return to the PM shift when they are not covering another shift. The Swing cook will work side by side with staff in all areas to learn the role and the job assignments. Temporary assignments for training could be from 1 week to a month depending on the assignment and the needed training. Swing cooks will also be trained in food and produce ordering, working on the packaging line and preparing production paperwork for the kitchen.

SPECIFIC DUTIES:
  • The Swing Cook will get work assignments from the Executive Sous Chef, who will be your direct supervisor.
  • At times you will work under supervision of other department supervisors such as SLP or HIV Special Diets, but your direct supervisor remains the Executive Sous Chef.
  • The Swing cook can be assigned to work any of the five main areas of our food operation; HIV regulars, HIV special diets, Senior Lunch Program, Soup Program and the PM Production Manager shift. Tasks will include baking, roasting and braising of meats, preparing soup, sauces, stock, starches and vegetables.
  • Ensures that all saved foods are covered, dated and rotated for quick use.
  • Maintains a clean work area and follows all local, state and federal health standard guidelines.
  • Complies with portion sizes, quality standards, and departmental rules, policies and procedures.
  • Will attend kitchen trainings and agency meetings.
  • Work with unpaid volunteers such as working the packaging line or other functions to complete the goals of the department.
  • Will be responsible for Kitchen Administrative tasks, such as updating Chef Tec Programs, making menus and labels for meals as well as ordering of supplies, printing labels when needed.
  • Any other tasks as assigned by the Executive Sous Chef or other kitchen or agency managers.


QUALIFICATIONS:

  • Must be able to maintain a consistent work schedule and must be flexible to work occasional overtime, weekends or holidays to meet production demands.
  • Must have Computer experience to include Word, Excel, and Outlook. Experience in CHEF TEC kitchen recipe software would be a plus. You will be tested in your computer experience as part of the hiring process.
  • Ability to communicate and work effectively with a culturally diverse kitchen team of staff & volunteers.
  • Have an understanding and be able to complete HACCP procedures.
  • Should be able to work effectively in a traditional kitchen environment that has wet floors, temperature extremes, and loud noise.
  • Must be able to bend, stoop, and lift items up to 50 pounds, unassisted, on a regular basis. Must be able to move fully loaded carts from floor to floor for storage.
  • Must be able to stand for long periods of time, and move from place to place in the kitchen.
  • Must be able to read and write in English to facilitate communications.
  • Sensitivity to the circumstances and needs of people living with critical illness and Seniors.
  • Must be able to provide a recent TB Test with a negative test result.
