This crunchy, cool, and delicious salad is quick and easy to put together. Add tofu or chicken for a complete meal or plate it with your favorite protein.

Salad Ingredients

  • 3 medium carrots
  • 1-2 green onions, finely chopped
  • Toasted sesame seeds (optional for garnish)

Dressing Ingredients

  • 1/2 - 1 teaspoon grated fresh ginger
  • 1 tablespoons coconut aminos
  • ½ tablespoon sesame oil or extra virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon lime juice
  • Dash red chili flakes (optional)
  • Salt and pepper, to taste

Directions

  1. Wash the produce. Grate the carrots using a box grater or julienne peeler. Set aside.
  2. In a large bowl, mix the dressing ingredients.
  3. Add the carrots and toss until the dressing is well incorporated. Taste and adjust the seasoning. For best flavor, allow carrots to marinate for 20 minutes before serving.
  4. Top with green onion and sesame seeds (if using).

Cover and store leftovers in the refrigerator for up to 3 days.
