Beet & Walnut Salad
Serves 4

Ingredients

  • 3-4 small beets, peeled
  • Salt and pepper to taste
  • 1/2 of a lemon
  • Olive oil
  • Balsamic vinegar
  • 1/2 cup walnuts, crushed or chopped
  • 2 cups of arugula (optional)
  • 1/2 cup (3.5 oz) feta cheese (optional)

Directions

  1.  Wash, peel, and cut the beets into small, square chunks.
  2. Once cut, put the beets in a separate bowl and sprinkle with the lemon.
  3. Add salt and pepper to taste. Mix well.
  4. Sprinkle the mixture with walnuts.
  5. Optional: Add the arugula and feta cheese.
