This homemade dressing is quick, easy, and healthier than store-bought commercial dressings. In this recipe, carrots are blended whole to keep the fiber and antioxidants. It’s a keeper!

Ingredients:

  • 1/3 cup olive oil

  • 1/3 cup unsweetened rice vinegar

  • 2 large carrots, peeled and chopped (about 2/3 cup)

  • 2 tablespoons fresh ginger, peeled and chopped

  • 2 tablespoons lime juice

  • 1-2 tablespoons honey or maple syrup

  • 1 1/2 teaspoons toasted sesame oil

  • 1/4 teaspoon salt

Directions:

  1. Add all the ingredients to a blender and blend until smooth. Serve with love! 

  2. Store leftovers in an airtight container in the fridge for 1-2 weeks.
