Ingredients (Serves 1)

1 tablespoon water (see note below)
1 medium apple (Granny Smith, Gala, Pink Lady, Fuji) cored and cut into 1/2-inch chunks
2 teaspoons light brown sugar (or to taste)
1/4 teaspoon ground cinnamon (or to taste)
6 ounces plain yogurt
1/4 cup granola, chopped nuts, or whole grain cereal (optional)
 

Directions using a microwave to cook apple:

  1. Cut apple into fourths. Remove core. Cut apple into 1/2-inch chunks.
  2. Add apple to a microwave-safe bowl. Put 1 tablespoon of water into bowl.
  3. Add brown sugar and cinnamon. Mix well to combine.
  4. Cover bowl with plastic wrap. Microwave for 1-2 minutes (depending on strength of microwave and desired softness of apples).

Let cool to room temperature before serving. 

To assemble parfait:

  1. Put half of the yogurt in an even layer in the bottom of a bowl or cup.
  2. Spread half of the cooked apples evenly on top of the yogurt.
  3. Put 2 tablespoons of granola, nuts, or cereal (if using).

Repeat steps 1-3 to create a 2nd layer. You can create as many layers as you want!
