Broccoli, kale, garbanzo beans and apple come together for this festive side dish

Serves 3-4 people

Ingredients

½ pound broccoli (frozen or fresh)
½ pound kale (frozen or fresh)
½ cup garbanzo beans (canned is fine)
½ cup sliced onion
2 cloves garlic, sliced
1 lemon, sliced, remove seeds
1 red apple, cubed


Dressing

2 tablespoons olive oil
½ teaspoon black pepper
½ teaspoon turmeric
½ teaspoon cinnamon
Pinch red pepper flakes

Directions
  • Preheat oven to 350 degrees.
  • Combine dressing ingredients in small bowl. Dip lemon slices in dressing and flip over so each one is fully coated with dressing.
  • Remove lemon slices and place in oven dish along with broccoli, kale, garbanzo beans, onion and garlic. Add dressing and toss until even throughout. If using frozen vegetables, add ¼ cup water to bottom of dish.
  • Cover with foil and place in oven.
  • After 10 minutes, remove foil and mix in apples.  Bake another 10 minutes.  Taste veggies for doneness and cook for another 5-10 minutes to desired tenderness.
