Country Soup in a Jar
Serves 4

Ingredients in the Jar

  • 1/3 cup barley
  • 1/3 cup dried split peas
  • 1/3 cup uncooked brown rice
  • 1/3 cup dry lentils
  • 1/3 cup whole wheat pasta
  • 2 tbsp dried minced onions
  • 2 tbsp dried parsley
  • 2 tbsp beef bouillon
  • 1/2 tsp lemon pepper

Ingredients to Prepare

  • 2 stalks celery, chopped
  • 2 carrots, sliced
  • 2 cups tomatoes, diced

Directions

  1. Add the contents of the jar, except the pasta, to 5 quarts of water to a pot.
  2. Cook over medium-low heat for 2 hours, or until beans and lentils are tender.
  3. While cooking the contents of the jar, prepare the produce (celery, carrots, and tomatoes) as noted above.
  4. Add in the pasta, vegetables and cook for an additional 20 minutes. Enjoy!
