Mango Apple Salad

A simple recipe with complex flavor. To make it a complete meal, serve along your favorite protein like chicken, tilapia, pork chop, tofu, or more.

Ingredients

  • 2 mangos
  • 1/2 small red onion, diced
  • 1 green apple, diced
  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 1/4 teaspoon kosher salt
  • dash crushed red peppers (optional)
  • 1/4 cup fresh cilantro or parsley
  • 3 tablespoons roasted sunflower seeds

Directions

  1. Wash all produce. Carefully peel and cut the mango away from the pit and into bite size pieces. 
  2. Place mangos, onion, and apples in a bowl. Add lime juice, olive oil, salt and crushed red pepper, if using. Gently toss and adjust the seasoning to taste. 
  3. Right before serving, sprinkle salad with cilantro/parsley and sunflower seeds. Serve with love. 

    This salad is best enjoyed immediately but you can store it in the fridge for up to 1 day. Store sunflower seeds separately and add to the salad when you are ready to eat.
