Napa Cabbage Salad
Ingredients
- 1/2 head of napa cabbage, thinly sliced
- 1-2 carrots, shredded
- 1 apple, chopped
- 2 limes, juiced (approx. 3 tablespoons)
- 3 tablespoons apple cider vinegar
- 4 tablespoon olive oil
- Dash of salt
- Optional: Fresh mint
- Optional: Green onions, chopped
Directions
- Place the cabbage, carrots, and apples in a large bowl.
- In a jar with a lid, add the lime juice, apple cider vinegar, olive oil, and a pinch of salt.
- With the lid on the jar tightly, shake it
- Add the dressing to the salad and toss. Adjust to taste.
- Top with mint and green onions.
Tips:
- To make this a complete meal, add cooked, shredded chicken or cubed tofu. For a little crunch, add a sprinkle of toasted, sliced almonds.
- Use a bread knife to thinly slice the napa cabbage.
- If the apples are looking brown after chopping, squeeze a little lime juice over the chopped apples (and mix) to preserve the color.
