Napa Cabbage Salad

Ingredients

  • 1/2 head of napa cabbage, thinly sliced
  • 1-2 carrots, shredded
  • 1 apple, chopped
  • 2 limes, juiced (approx. 3 tablespoons)
  • 3 tablespoons apple cider vinegar
  • 4 tablespoon olive oil
  • Dash of salt
  • Optional: Fresh mint
  • Optional: Green onions, chopped

Directions

  1. Place the cabbage, carrots, and apples in a large bowl.
  2. In a jar with a lid, add the lime juice, apple cider vinegar, olive oil, and a pinch of salt. 
  3. With the lid on the jar tightly, shake it
  4. Add the dressing to the salad and toss. Adjust to taste.
  5. Top with mint and green onions.

Tips:

  • To make this a complete meal, add cooked, shredded chicken or cubed tofu. For a little crunch, add a sprinkle of toasted, sliced almonds.
  • Use a bread knife to thinly slice the napa cabbage.
  • If the apples are looking brown after chopping, squeeze a little lime juice over the chopped apples (and mix) to preserve the color.
