Roger’s Story: A Hair-Raising Tale

Shopping at Project Open Hand is truly a life saver. Project Open Hand supplies clients with basic, healthy and nutritious groceries. I have found that by being a bit creative and using the POH groceries in conjunction with other food sources, I can make delicious and even memorable meals. Thanks to Project Open Hand I have created a nutty, fruity, cheesy tasty-delight out of a boring old turkey burger. Here is my “secret” recipe for my ‘Loinboy Turkey Burger:

SHOPPING LIST

From the Project Open Hand Grocery Center (or your local grocery store):

  • Cottage Cheese
  • Trail Mix (granola, sunflower seeds, dried cranberries, raisins)
  • Eggs
  • Bread
  • Cheese – Cheddar, Jack, or Pepper Jack

From a local grocer:

  • Ground Turkey Meat (I buy mine at Trader Joe’s)
  • Mustard (optional)
  • Ground Red Chili in Oil (optional)
  • Salt
  • Black Pepper
  • Bagels or Preferred Roll
  • Vegetable Oil/ Sesame Oil
  • Ground Cinnamon

DIRECTIONS

  1. Thoroughly mix the following ingredients in a large bowl. Clean, bare hands are best for mixing ingredients and making burger patties.
    • 2 lbs Ground Turkey Meat (or ground meat of choice)
    • 8-oz. container cottage cheese
    • 1 egg
    • 1 packet Project Open Hand Trail Mix (Make sure the raisins and cranberries are pushed into the center of the burger patties, otherwise they fall off during cooking)
    • 1 Tablespoon mustard (optional)
    • 1 Tablespoon chili oil/paste (optional)
    • Salt and pepper to taste
    • ¼ teaspoon or dash of Cinnamon

    NOTES: Please note with seasoning, I happen to like mustard and chili, but if you prefer other seasonings or extras, i.e., chopped garlic or onion please edit the recipe to suit your personal tastes. I usually make up six large hamburger patties, but I am sure you could make smaller patties and stretch the recipe out to eight burgers.

  2. Preheat frying pan (a George Foreman Grill is great too!!!).
  3. Add a bit of vegetable oil and add a few dashes of sesame oil. The secret to the perfect burger is to not let it stick to the hot pan. After initially searing the burger, move the patty often in the pan but DO NOT flip it over.
  4. Wait until the burger is browned on the first side and the meat is starting to look cooked up around the sides of the burger.
  5. FLIP THE BURGER ONLY ONCE during the cooking process.
  6. After searing the second side, continue to keep the burger moving while cooking it.
  7. Add sliced cheese to melt on top of burger for cheese burger, if desired.
  8. Once seared, the burger moves freely in pan, even when covered in gooey cheese, and it will become perfectly browned.
  9. Make sure you cook your burger thoroughly, usually 7-10 minutes per side. You may want to cover pan for last few minutes to melt the cheese thoroughly.
  10. Toast your bread or bagel, spread on some mustard (or ketchup or mayo if preferred), slap on a burger and enjoy your healthy, inexpensive delicious meal.

Roger - Project Open Hand ClientAfter I figure in the costs of the turkey meat, seasonings, and bagels, I spend about a $1.75 a burger and get six meals out of the whole process. I usually choose the Salad Greens from the Project Open Hand menu to garnish my perfect ‘Loinboy Burger.
