Ingredients (Makes 6-10 servings)

 

  • 1 medium size watermelon
  • 2 lemons, juiced
  • 1/2 c. mint leaves, chopped
  • 1 c. crumbled feta cheese
  • 1 red onion, sliced 

Directions

 

  1. Dice watermelon into bite sized pieces; remove any black seeds
  2. Mix mint leaves, feta cheese, and red onion in with the watermelon in a large bowl
  3. Pour lemon juice over the salad
  4. Enjoy!
Watermelon is a good source of Lycopene, a powerful antioxidant!
