Zucchini Pickles
Ingredients
- 1 medium or 2 small zucchinis
- 1 1/4 cup water
- 1 1/4 cup white vinegar
- 1 tablespoon salt
- 2 teaspoons sugar or honey
Optional:
- 1/2 small onion, sliced
- 3 cloves garlic, peeled
- 1 teaspoon chili flakes
- 1 teaspoon black peppercorns
Directions
- Trim the ends and slice the zucchini into thin rounds, about 1/8 - 1/4"
- Add the zucchini (and optional ingredients) to a clean quart size jar.
- Add water, vinegar, salt, and sugar to a medium saucepan on high heat and bring to a boil. Once boiling, remove from heat.
- Carefully pour the liquid into the jar over the zucchini rounds.
- Allow it to cool on the countertop. Once cooled, cover and refrigerate.
- Refrigerate it for at least 24 hours before enjoying. (Note: It will keep in the refrigerator for 1-2 months.) Enjoy!
