Zucchini Pickles

Ingredients

  • 1 medium or 2 small zucchinis
  • 1 1/4 cup water
  • 1 1/4 cup white vinegar
  • 1 tablespoon salt
  • 2 teaspoons sugar or honey

Optional:

  • 1/2 small onion, sliced
  • 3 cloves garlic, peeled
  • 1 teaspoon chili flakes
  • 1 teaspoon black peppercorns

Directions

  1.  Trim the ends and slice the zucchini into thin rounds, about 1/8 - 1/4"
  2. Add the zucchini (and optional ingredients) to a clean quart size jar.
  3. Add water, vinegar, salt, and sugar to a medium saucepan on high heat and bring to a boil. Once boiling, remove from heat.
  4. Carefully pour the liquid into the jar over the zucchini rounds. 
  5. Allow it to cool on the countertop. Once cooled, cover and refrigerate.
  6.  Refrigerate it for at least 24 hours before enjoying. (Note: It will keep in the refrigerator for 1-2 months.) Enjoy!
