Ingredients: 
 

  • 2-3 boneless, skinless chicken breasts (sliced into 1" strips)
  • 3 tbsp. vegetable oil
  • 2 tsp. salt
  • 2 tsp. paprika
  • 2 tsp. ground cumin
  • 2 tsp. chili powder
  • 1 tsp. coriander
  • 1 tsp. black pepper
  • 2 tbsp. lime juice
  • 2 tbsp. garlic, minced
  • 2 medium onions (sliced 1/2" wide) 
  • 2 bell peppers (sliced 1/2" wide)
  • 1 bunch fresh cilantro, lightly chopped
  • 1 package flour tortillas

Directions:

  1. Mix salt and spices in a separate bowl, set aside; place chicken pieces into a bowl and sprinkle in 1 tbsp. oil,  2 tbsp. spice mix, 1 tbsp. minced garlic and 1 tbsp. lime juice

  2. Mix well and let marinate for 20 minutes; slice the peppers and onions place in a bowl

  3. Heat skillet on medium high heat; add 2 tbsp. oil and chicken; cook cook until done  (approximately 10-15 minutes)

  4. Add peppers and onions and toss; add the rest of garlic and spice mixture

  5. Cook together for approximately 5-7 minutes until chicken is fully cooked and vegetables are tender

  6. Serve with fresh cilantro, lime juice and sour cream
